Ingredients

½ cup olive or avocado oil
2 Tbsp. Southwestern Mesquite Rub & Seasoning
¼ cup freshly squeezed lemon juice
½ tsp. salt
1 cup water
2 lbs. (.907 kg) chicken breasts or thighs

Instructions

In a large sealable container or bag, add the first five ingredients, mixing well to combine flavours, then add chicken. Marinate for a minimum of 30 minutes and ideally for 24 hours. Remove chicken and discard the marinade, place in a baking dish and sprinkle with additional Southwestern Mesquite Rub & Seasoning. Bake in oven at 375°F or BBQ over medium heat until cooked through and internal temperature reaches 165°F.
